- 2 cups granulated sugar
- 3 large eggs

- 2 cups grated zucchini (about 3 medium zucchinis)
- 12 oz semi-sweet chocolate chips (divided)
Instructions
- Preheat your oven to 350°F and prepare two loaf pans with baking spray or grease.
- In a large mixing bowl, whisk together sugar, eggs, oil, and vanilla until mixed well.
- Add in flour, cocoa powder, salt, baking powder, baking soda, and cinnamon; stir until combined.
- Fold in grated zucchini and 8 oz of chocolate chips until evenly distributed.
- Divide the batter between prepared pans and top with remaining chocolate chips.
- Bake for 50–60 minutes or until a toothpick inserted comes out clean.
- Cool in pans for 5–10 minutes before transferring to cooling racks.
