- 1 1/2 pounds chicken breasts
- 3 small to medium heads romaine lettuce
- 1/2 English cucumber
- 1 medium bell pepper
- 1 cup kalamata olives
- 1 cup cherry tomatoes
- 1/2 cup feta cheese
- For tzatziki dressing: Greek yogurt, mayonnaise, garlic, lemon juice, cucumber
Instructions
- Prepare the Tzatziki Dressing: Drain diced cucumbers with salt for 15–20 minutes. Blend cucumbers with yogurt, mayonnaise, garlic, lemon juice, vinegar, parsley, salt, and pepper until smooth. Refrigerate.
- Marinate the Chicken: Combine olive oil, lemon juice, buttermilk, garlic, oregano, salt, and pepper in a bag. Add chicken; marinate for 8–12 hours in the fridge. Grill until cooked through (165°F).
- Make Pita Croutons: Cut pita into squares; toast in the oven at 375°F for 15–20 minutes until golden brown.
- Assemble the Salad: Combine chopped romaine lettuce, cucumbers, bell peppers, olives, onions in a bowl. Top with sliced chicken and drizzle with tzatziki. Add croutons and feta before serving.
