- 2 cups apple cider
- 2 tbsp unsalted butter
- 1/2 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 1/2 cups cake flour
- 1 tsp ground cinnamon
- 4 oz cream cheese
Instructions
- Preheat your oven to 350°F (175°C) and prepare your muffin tin by greasing it or lining it with cupcake liners.
- In a saucepan over medium heat, sauté diced apples with butter, brown sugar, and cinnamon until tender. Set aside to cool.
- In one mixing bowl, whisk together cake flour, baking powder, cinnamon, nutmeg, and salt. In another bowl, mix melted brown butter with sugars until smooth. Add in the eggs and vanilla.
- Combine the wet and dry mixtures until just blended. Fold in the cooked apples.
- Fill muffin cups two-thirds full and bake for 20-25 minutes until golden brown.
- Allow cupcakes to cool before frosting with a mixture of cream cheese and powdered sugar mixed with apple cider reduction.
