Instructions
- Preheat your oven to 350°F (175°C) and prepare a greased and floured 9×5 inch loaf pan.
- In one bowl, whisk together flour, cinnamon, baking soda, salt, and nutmeg.
- In another bowl, mix sugar, vegetable oil, eggs, and vanilla until smooth.
- Gently combine wet and dry ingredients; fold in grated zucchini and nuts if using.
- Pour batter into the loaf pan and prepare the streusel topping by mixing flour, brown sugar, granulated sugar, cinnamon, and cold butter until crumbly.
- Sprinkle streusel over the batter in the pan.
- Bake for 50-60 minutes or until a skewer comes out clean.
- Cool before slicing.
