- 9 roma or plum tomatoes (diced)
- 1/2 cup fresh basil (chopped)
- 1/3 cup parmesan cheese (shredded)
- 1 1/2 tbsp garlic (minced)
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 loaf French or Italian bread (sliced into rounds and toasted golden brown)
- Fresh parsley for garnish
Instructions
- In a large mixing bowl, combine diced tomatoes, chopped basil, shredded parmesan cheese, minced garlic, balsamic vinegar, olive oil, salt, and black pepper. Mix well.
- Preheat your oven to 400°F (200°C) and toast the sliced bread on a baking sheet for about 5–7 minutes until golden brown.
- Once toasted, remove the bread from the oven and top each slice with about 1–2 tablespoons of the tomato mixture.
- Garnish with finely chopped parsley and serve immediately.
