  • 1/3 cup parmesan cheese (shredded)
  • 1 1/2 tbsp garlic (minced)
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 loaf French or Italian bread (sliced into rounds and toasted golden brown)
  • Fresh parsley for garnish

Instructions

  1. In a large mixing bowl, combine diced tomatoes, chopped basil, shredded parmesan cheese, minced garlic, balsamic vinegar, olive oil, salt, and black pepper. Mix well.
  2. Preheat your oven to 400°F (200°C) and toast the sliced bread on a baking sheet for about 5–7 minutes until golden brown.
  3. Once toasted, remove the bread from the oven and top each slice with about 1–2 tablespoons of the tomato mixture.
  4. Garnish with finely chopped parsley and serve immediately.
