Instructions
- Preheat your oven to 350°F (175°C) and prepare two 8-inch round cake pans with nonstick spray.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and spices.
- In another bowl, mix the melted oil, sugar, eggs, buttermilk, and vanilla until smooth.
- Pour the wet mixture into the dry ingredients and fold gently until combined. Add grated carrots and fold until just incorporated.
- Divide batter evenly between prepared pans and bake for 26 to 28 minutes until a toothpick comes out clean.
- Allow cakes to cool in pans on a wire rack before frosting.
