- 8 oz chicken sausage, sliced
- 1 medium onion, diced
- 1 cup mixed bell peppers (red and green), chopped
- 2 tbsp olive oil
- 1 cup vegetable broth
- 2 tbsp chopped fresh parsley
Instructions
- Prepare your ingredients by chopping the onion and bell peppers into bite-sized pieces.
- Heat olive oil in a large skillet over medium heat. Sauté the onions for about 5 minutes until translucent, then add the bell peppers and cook until tender.
- Add sliced chicken sausage to the skillet and cook until browned on both sides (about 5 minutes).
- Gently stir in frozen potato perogies, ensuring they do not break apart.
- Pour in vegetable broth to cover half of the perogies, cover with a lid, and steam for about 8 minutes.
- Remove the lid, stir everything together, and serve garnished with fresh parsley.
