Instructions
- Clean the clams by soaking them in water for 20 minutes.
- In a large pot, bring the coconut milk to a gentle simmer over medium heat.
- Add the smashed lemongrass, minced garlic, and grated ginger; stir for 2-3 minutes to infuse flavors.
- Season with fish sauce, lime juice, salt, pepper, and optional chili peppers.
- Add cleaned clams to the pot and cover; steam for 5-7 minutes until clams open.
- Discard any unopened clams and ladle into bowls.
- Garnish with fresh cilantro before serving.
