  • 1/2 cup powdered sugar
  • 8 oz mascarpone cheese
  • 1/2 cup coconut cream
  • 1 cup heavy cream
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 12 oz evaporated milk
  • 1/2 cup rum
  • 24 ladyfingers
  • 2 cups coconut flakes
  • 1 tsp cinnamon

Instructions

  1. In a large bowl, separate and whisk the egg yolks with powdered sugar until pale.
  2. Combine mascarpone, coconut cream, and half the coconut milk into the egg mixture; mix well.
  3. Whip heavy cream with remaining powdered sugar until stiff peaks form; fold into mascarpone mixture.
  4. Prepare coquito mixture by mixing remaining sweetened condensed milk, evaporated milk, coconut milk, rum, and cinnamon in another bowl.
  5. Briefly dip ladyfingers in coquito mixture; layer in a pan.
  6. Spread half of the cream mixture over layers; sprinkle with coconut flakes.
  7. Repeat layering process with remaining ingredients.
  8. Dust top layer with cinnamon and refrigerate for at least 12 hours before serving.
