- 5 eggs
- 1/2 cup powdered sugar
- 8 oz mascarpone cheese
- 1/2 cup coconut cream
- 1 cup heavy cream
- 14 oz sweetened condensed milk
- 13.5 oz coconut milk
- 12 oz evaporated milk
- 1/2 cup rum
- 24 ladyfingers
- 2 cups coconut flakes
- 1 tsp cinnamon
Instructions
- In a large bowl, separate and whisk the egg yolks with powdered sugar until pale.
- Combine mascarpone, coconut cream, and half the coconut milk into the egg mixture; mix well.
- Whip heavy cream with remaining powdered sugar until stiff peaks form; fold into mascarpone mixture.
- Prepare coquito mixture by mixing remaining sweetened condensed milk, evaporated milk, coconut milk, rum, and cinnamon in another bowl.
- Briefly dip ladyfingers in coquito mixture; layer in a pan.
- Spread half of the cream mixture over layers; sprinkle with coconut flakes.
- Repeat layering process with remaining ingredients.
- Dust top layer with cinnamon and refrigerate for at least 12 hours before serving.
