Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, mix together flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk melted butter, milk, eggs, and vanilla until combined.
- Pour the wet mixture into the dry ingredients and mix gently until just combined.
- For the streusel topping: combine flour, brown sugar, and cinnamon in a small bowl; add cold butter pieces and mix until coarse crumbs form.
- Fill each muffin tin about two-thirds full with batter; sprinkle streusel over the top.
- Bake for 18–22 minutes or until a toothpick comes out clean.
- Let cool for five minutes before transferring to a wire rack.
