Instructions
- Preheat your oven to 350°F.
- Mix ketchup, brown sugar, and mustard in a bowl for the glaze; set aside.
- In a large bowl, combine eggs, crushed Ritz crackers, cheese, milk, onion, bell pepper (if using), salt, and pepper.
- Gently mix in the ground beef until just combined.
- Transfer the mixture to a greased loaf pan and bake for 30 minutes.
- Spread the glaze over the meatloaf and return to the oven for another 30-40 minutes until cooked through.
