- 2 ripe avocados
- 1/4 cup fresh lime juice
- 1 cup cherry tomatoes (halved)
- 1/2 cup diced cucumber
- 1/4 cup chopped cilantro or parsley
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and rinse under cold water.
- In a mixing bowl, mash the ripe avocados. Add fresh lime juice, garlic powder, salt, and pepper; mix until smooth.
- In a large bowl, combine cooled pasta, diced cucumber, halved cherry tomatoes, and chopped herbs.
- Pour the avocado dressing over the pasta mixture and toss gently until well coated.
- Chill for about 15 minutes if desired, then serve garnished with extra herbs or lime wedges.
