- 20 oz cheese tortellini
- 1 lb beef sirloin, thinly sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 4 cloves garlic (2 minced for sautéing, 2 for sauce)
- ½ cup shredded provolone cheese
- ½ cup grated Parmesan cheese
- 2 cups whole milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions; drain and set aside.
- In a skillet, heat olive oil over medium-high heat. Add sliced beef sirloin and cook until browned (about 5 minutes). Remove from skillet.
- In the same skillet, add bell pepper, onion, and minced garlic; sauté until softened (5-7 minutes). Remove from heat.
- In a saucepan, melt butter over medium heat; whisk in flour for about a minute. Gradually add milk while whisking continuously until thickened (3-4 minutes). Stir in cheeses until melted; season with salt and pepper.
- Combine cooked tortellini, beef, and vegetables into the cheese sauce; stir gently to combine.
- Serve hot, garnished with fresh parsley if desired.
