Instructions
- Brown the ground beef in a large pot over medium heat for about 5–7 minutes. Drain excess fat if necessary.
- Add diced onion and minced garlic; sauté until onions are translucent (3–4 minutes).
- Stir in beef broth, diced tomatoes, corn, black beans, diced potatoes, and spices (smoked paprika, chili powder, cumin). Season with salt and pepper.
- Bring to a boil; then reduce heat and simmer for approximately 20 minutes until potatoes are tender.
- Remove from heat and stir in heavy cream until well combined.
- Serve hot with toppings like shredded cheese, green onions, and crushed tortilla chips.
