- 1 tsp chili powder
- Salt to taste
- Optional: garlic clove, jalapeño
Instructions
- Heat butter in a skillet over medium heat until melted.
- Sauté corn kernels until lightly charred (about 5–7 minutes).
- In a large bowl, mix together mayonnaise, crema, garlic (if using), jalapeño (if using), lime juice, chili powder, and salt.
- Combine warm corn with the creamy mixture and toss until evenly coated.
- Scoop into serving cups and sprinkle with Cotija cheese and extra chili powder.
- Garnish with chopped cilantro and serve warm.
