- 1 lb Italian sausage
- 1 tbsp olive oil
- 1 small onion
- 2 cloves garlic
- 1 can diced tomatoes
- 2 quarts chicken stock
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese
- 1 cup ditalini pasta
- Dried basil
- Dried oregano
- Salt
- Pepper
- Fresh parsley for garnish
Instructions
- In a large pot over medium heat, add olive oil and brown the Italian sausage. Remove and set aside.
- Sauté chopped onion and minced garlic in the same pot until fragrant.
- Stir in diced tomatoes and chicken stock; add dried herbs and return sausage to the pot. Simmer gently.
- Cook ditalini pasta in the simmering soup until al dente.
- Lower heat and stir in heavy cream and grated Parmesan cheese until melted. Season to taste and garnish with fresh parsley.
