- ¼ cup diced sundried tomatoes
- 3 garlic cloves (minced)
- ¼ cup flour
- 6 – 8 cups chicken broth
- 6 oz pasta (Italian small shells recommended)
- 1 cup heavy whipping cream
- 2 – 3 cups fresh spinach
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Add chicken, Italian seasoning, salt, and pepper; brown for about 4–5 minutes.
- Add onions, carrots, celery, sundried tomatoes, and garlic; cook until translucent (3–4 minutes).
- Sprinkle in the flour gradually while stirring to combine.
- Whisk in the chicken broth slowly while stirring continuously.
- Bring to a boil and add pasta; reduce heat and simmer for about 20 minutes until cooked through.
- Stir in heavy cream, spinach, and Parmesan cheese; simmer for another 5 minutes.
- Adjust seasoning before serving.
