Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken, Italian seasoning, salt, and pepper; brown for about 4–5 minutes.
  2. Add onions, carrots, celery, sundried tomatoes, and garlic; cook until translucent (3–4 minutes).
  3. Sprinkle in the flour gradually while stirring to combine.
  4. Whisk in the chicken broth slowly while stirring continuously.
  5. Bring to a boil and add pasta; reduce heat and simmer for about 20 minutes until cooked through.
  6. Stir in heavy cream, spinach, and Parmesan cheese; simmer for another 5 minutes.
