Ingredients
- 3 cups cooked chicken (chopped or shredded)
- 1/2 cup pecans
- 1 cup red grapes (halved)
- 3/4 Granny Smith apple (chopped)
- 4 croissants
- 1/3 cup mayonnaise
- 3 tablespoons Greek yogurt
- 2 tablespoons Dijon mustard
- Fresh dill
- Lemon juice
- Salt
- Pepper
Instructions
- Preheat the oven to 400°F. Spread pecans on a baking sheet and toast for 8–10 minutes until lightly browned. Cool and chop.
- In a large mixing bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, chopped dill, salt, and pepper.
- Add the chopped chicken, halved grapes, diced apples, finely chopped red onion, and toasted pecans into the dressing. Stir until evenly coated.
- Slice each croissant horizontally to create a pocket without cutting all the way through. Fill generously with the chicken salad mixture.
- Serve immediately on a platter or pack for later enjoyment.
