- 1 loaf of brioche bread, sliced into 1/2-inch thick pieces
- 8 ounces Gruyère cheese, grated
- 4 ounces Swiss cheese, grated
- 8 ounces Black Forest chicken ham, thinly sliced
- 1/2 cup (1 stick) unsalted butter
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon white pepper
- 1/2 teaspoon salt, or to taste
- 2 tablespoons Dijon mustard
Instructions
- Melt butter in a medium saucepan over medium heat.
- Whisk in flour for 2-3 minutes until smooth.
- Slowly add milk while whisking continuously until thickened.
- Season the sauce with nutmeg, white pepper, and salt; set aside.
- Preheat oven to 375°F (190°C).
- Spread one side of each brioche slice with Dijon mustard.
- Layer chicken ham and cheeses on half of the slices.
- Top each filled slice with another brioche slice.
- Spread béchamel sauce on top and sprinkle with remaining cheese.
- Bake on a lined baking sheet for 15-20 minutes until golden brown.
