Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together softened butter, oil, granulated sugar, and powdered sugar until fluffy.
- Mix in the egg and butter vanilla emulsion until well combined.
- In a separate bowl, whisk together flour, salt, and baking powder; gradually add to the wet ingredients.
- Scoop tablespoon-sized balls onto a lined baking sheet and bake for about 8 minutes until edges are golden.
- In another bowl, mix pudding mix with milk until smooth; fold in cool whip and chopped bananas.
- Once cookies cool, top each with the creamy mixture and garnish with Nilla wafers.
