Ingredients
- 1 baked sponge cake or ladyfinger base
- 1 cup strong brewed coffee, cooled
- 3 tbsp coffee liqueur (optional)
- 1 ½ cups mascarpone cheese
- 1 cup heavy cream
- ½ cup powdered sugar
- 1 tsp vanilla extract
- Unsweetened cocoa powder for dusting
Instructions
- Brew strong coffee and cool completely. Add coffee liqueur if desired.
- In a mixing bowl, whip heavy cream until soft peaks form.
- In another bowl, beat mascarpone cheese with powdered sugar and vanilla until smooth. Fold in whipped cream gently.
- Slice the sponge cake into layers and brush each layer with the cooled coffee mixture.
- Spread mascarpone cream over each soaked layer while stacking them.
- Chill the assembled cake in the refrigerator for at least 4 hours or overnight. Dust with cocoa powder before serving.
