Ingredients
- 8 to 12 large mushrooms
- 1 (6 oz) can of minced clams
- 1 finely minced green onion
- 1 beaten egg
- 1/2 cup Italian-style breadcrumbs
- 1 tablespoon melted butter
- Various cheeses: Parmesan, Romano, Mozzarella
Instructions
- Preheat your oven to 350°F (175°C) and lightly oil a baking dish.
- Clean the mushrooms and remove the stems. Pat dry.
- In a mixing bowl, combine drained clams, green onion, garlic, melted butter, breadcrumbs, beaten egg, and reserved clam juice; mix well.
- Stir in grated cheeses until evenly combined.
- Stuff each mushroom cap generously with the filling.
- Place stuffed mushrooms in the baking dish and drizzle with melted butter.
- Bake covered for 35-40 minutes until tender. Remove foil, add more cheese on top, and bake until melted.
- Garnish with parsley and serve warm with lemon wedges.
