Instructions

- In a large mixing bowl, cream together softened butter and sugar until light and fluffy.
- Beat in the egg, followed by the lemon zest and juice until well blended.
- Gradually mix in dry ingredients until just combined. Gently fold in raspberries.
- Drop spoonfuls of dough onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until edges are lightly golden. Transfer to wire racks to cool.
