Instructions
- Prepare the crust: If using a pre-made graham cracker crust, set aside. For homemade, crush 1½ cups of graham crackers and mix with 6 tablespoons melted butter; press into the bottom of a pie dish.
- Zest and juice the lemons: Use a microplane to zest the lemons, then squeeze half a cup of juice.
- Combine filling: In a bowl, mix sweetened condensed milk with lemon juice and zest until smooth.
- Dissolve agar-agar: Mix 1 tablespoon agar-agar powder with 2 tablespoons water over low heat until dissolved; stir into the lemon mixture.
- Fold in whipped topping: Gently combine non-dairy whipped topping with the lemon filling until airy.
- Chill: Pour filling into prepared crust, cover with plastic wrap, and refrigerate for at least 4 hours or overnight until set.
