- 1 can (15 oz) canned white beans (cannellini or great northern), drained and rinsed
- 1 can (14 oz) hearts of palm, sliced
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- ½ small red onion, thinly sliced
- ¼ cup fresh parsley, chopped
- ¼ cup fresh basil, chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- Salt and pepper to taste
Instructions
- Prepare the ingredients by draining and rinsing the white beans and slicing the hearts of palm.
- In a large mixing bowl, combine white beans, hearts of palm, cucumber, cherry tomatoes, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, salt, pepper, parsley, and basil.
- Pour the dressing over the salad mixture and gently toss until well combined.
- Chill in the fridge for at least 15 minutes before serving to enhance flavors. Toss again before serving.
