  • 4 pieces uncooked turkey bacon, diced
  • 1 small white onion, finely diced
  • 1 jalapeno, diced (add more for extra heat)
  • 4 garlic cloves, minced
  • 1 (12-ounce) bottle dark Mexican beer
  • 4 (15-ounce) cans pinto beans, rinsed and drained
  • 1 tablespoon brown sugar
  • fresh lime juice and cilantro for garnish

Instructions

  1. Cook turkey bacon in a large sauté pan over medium-high heat until crispy. Remove with a slotted spoon and set aside.
  2. In the same pan, sauté onion and jalapeno in reserved bacon grease for about 5 minutes until soft.
  3. Add minced garlic and cook for an additional minute.
  4. Stir in beer, pinto beans, brown sugar, oregano, chili powder, salt, and cumin. Bring to a simmer and cook uncovered for about 15 minutes.
  5. Stir in cooked turkey bacon and fresh lime juice before serving. Garnish with chopped cilantro.
