Instructions
- Preheat your oven to 350°F and line two cookie sheets with parchment paper.
- In a stand mixer, combine cake mix, egg, and butter until a soft dough forms.
- Mix in 1 cup of Easter sprinkles.
- Scoop dough into balls and roll in remaining sprinkles.
- Place on cookie sheets and bake for 10–12 minutes; let cool on wire racks.
- For frosting, beat softened butter, powdered sugar, heavy cream, and pink gel food coloring until creamy.
- Assemble whoopie pies by piping frosting on one pie and sandwiching another on top.
