  • 2 sweet bell peppers (sliced)
  • 2 yellow squash (sliced)
  • 2 zucchini (sliced)
  • 1 small onion (sliced)
  • 1 lb asparagus (chopped)
  • 4 ounces feta cheese (optional)

Instructions

  1. In a bowl, whisk together olive oil, balsamic vinegar, red apple vinegar, oregano, basil, garlic powder, Dijon mustard, salt, and pepper.
  2. Pour the marinade over sliced vegetables in a large bowl. Let marinate for at least 15 minutes.
  3. Preheat grill to medium-high heat.
  4. Place marinated vegetables in a vegetable basket or on foil on the grill.
  5. Grill for about 4–5 minutes on one side until browned. Flip and grill an additional 5 minutes until tender.
  6. Remove from grill and sprinkle feta cheese on top before serving.
