- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons red apple vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 2 sweet bell peppers (sliced)
- 2 yellow squash (sliced)
- 2 zucchini (sliced)
- 1 small onion (sliced)
- 1 lb asparagus (chopped)
- 4 ounces feta cheese (optional)
Instructions
- In a bowl, whisk together olive oil, balsamic vinegar, red apple vinegar, oregano, basil, garlic powder, Dijon mustard, salt, and pepper.
- Pour the marinade over sliced vegetables in a large bowl. Let marinate for at least 15 minutes.
- Preheat grill to medium-high heat.
- Place marinated vegetables in a vegetable basket or on foil on the grill.
- Grill for about 4–5 minutes on one side until browned. Flip and grill an additional 5 minutes until tender.
- Remove from grill and sprinkle feta cheese on top before serving.
