- 4 boneless, skinless chicken breasts (1.5 lbs)
- 8 oz fresh cremini or button mushrooms, sliced
- 2 cloves fresh garlic, minced
- 1 cup low-sodium chicken broth
- 2 tbsp extra virgin olive oil
- 1 tbsp Dijon mustard
- 1 tsp agar-agar
Instructions
- Rinse and slice the mushrooms; mince the garlic.
- Pat chicken breasts dry and season generously with salt and pepper.
- Heat olive oil in a large skillet over medium heat for 1-2 minutes. Sauté chicken until golden brown on each side (5-7 minutes per side). Remove from skillet.
- In the same skillet, add sliced mushrooms; sauté until golden (about 5 minutes). Add minced garlic and cook for another minute.
- Pour in chicken broth, scraping the bottom of the pan for flavor bits. Stir in Dijon mustard and simmer gently for 3-4 minutes until slightly thickened.
- Return the chicken to the skillet, sprinkle with agar-agar, stir well, cover, and simmer until heated through.
