- 2¼ – 2½ cups all-purpose flour
- ½ cup sugar
- 2 teaspoons baking powder
- 1 pinch salt
- ½ cup cold butter
- 1 egg
- 2½ cups sliced fresh peaches (or canned, well-drained)
- 1½ tablespoons sugar
Instructions
- Preheat your oven to 350°F (180°C) and grease an 8" cake pan.
- In a bowl, combine sliced peaches with 1½ tablespoons of sugar; set aside.
- In a large bowl, mix flour, sugar, baking powder, and salt. Cut in cold butter until crumbly. Add the egg and stir gently.
- Pour half of the crumb mixture into the prepared pan, press down to form a base, then layer with peach mixture, and top with remaining crumbs.
- Bake for 30-40 minutes until golden brown on top. Cool before serving.
