- 3 large egg whites

- 1 cup finely ground almond flour
- 3 egg yolks
- 4 tbsp unsalted butter
- 1/2 cup fresh lemon juice
- Zest from 1 lemon
Instructions
- Prepare baking sheets by lining them with parchment paper.
- In a stand mixer, whip egg whites and cream of tartar until soft peaks form. Gradually add granulated sugar and continue whipping until stiff peaks form.
- Sift powdered sugar and almond flour together; gently fold into whipped egg whites until combined.
- Pipe small rounds onto prepared baking sheets and let rest at room temperature for 30 minutes.
- Preheat oven to 300°F (150°C) and bake shells for about 15–20 minutes, then let cool completely.
- For the filling, whisk egg yolks, lemon juice, zest, sugar, cornstarch, and salt in a saucepan over medium heat until thickened; mix in butter until melted.
- Assemble macarons by piping lemon filling between two macaron shells.
