Instructions
- In a large pot, combine water (or broth), onion, celery, carrots, garlic, and salt. Bring to a boil.
- Reduce heat to medium-low and simmer covered for about 45 minutes until vegetables are tender.
- Transfer cooked veggies to a blender with some broth and blend until smooth. Return the mixture to the pot.
- In a separate small pot, cook pastina according to package instructions until al dente.
- Serve by placing pastina in bowls, topping with the creamy broth, and garnishing with Parmigiano cheese.
