  • 1 teaspoon active dry yeast
  • 3 cups bread or all-purpose flour
  • ½ teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 2 teaspoons finely chopped fresh rosemary

Instructions

  1. Preheat oven to 400°F (204°C). Cut garlic head in half, drizzle with olive oil, sprinkle with salt and pepper, wrap in foil, and roast for 40 minutes until soft. Cool before removing cloves.
  2. In a small bowl, dissolve yeast in room-temperature water and let sit for 10–15 minutes until frothy.
  3. In a large bowl, combine flour, salt, oregano, rosemary, roasted garlic cloves, and yeast mixture. Mix using a spatula until sticky.
  4. Cover with a towel and let rise at room temperature for 8–10 hours.
  5. Shape the dough into a ball on a floured surface and refrigerate for up to 24 hours.
  6. Preheat your Dutch oven to 450°F (232°C). Score the top of the dough with a sharp blade before baking.
  7. Place dough in preheated Dutch oven and bake covered for 30 minutes; uncover and bake an additional 15–20 minutes until golden brown.
  8. Cool on a wire rack for at least one hour before slicing.
