Ingredients
- 1 sheet pie crust (store-bought or homemade)
- 3–4 medium ripe tomatoes (thinly sliced)
- 1/2 cup crumbled goat cheese (or shredded mozzarella)
- 1/4 cup fresh basil leaves (chopped or torn)
- 1 tablespoon olive oil
- 1 clove garlic (minced)
- Salt and black pepper to taste
- Optional: 1 egg (beaten for egg wash)
Instructions
- Preheat your oven to 400°F (200°C). Roll out the pie crust into a 12-inch circle and chill while preparing the filling.
- Thinly slice tomatoes, sprinkle with salt, and let sit for 10–15 minutes to draw out moisture. Pat dry.
- Place the chilled crust on parchment paper. Spread cheese in the center, leaving a 2-inch border.
- Layer tomato slices over the cheese. Sprinkle with basil, garlic, salt, and pepper.
- Fold edges of the dough over the filling, overlapping slightly for a rustic look.
- Optionally brush crust with beaten egg wash and drizzle olive oil over tomatoes before baking for 35–40 minutes until golden brown.
- Let cool for 10 minutes before slicing and serving warm or at room temperature.

Keywords: Use fresh ingredients for the best flavor; seasonal tomatoes and basil are ideal. To customize, swap goat cheese for feta or add other vegetables like zucchini or bell peppers. For a beautiful finish, brush the crust with an egg wash before baking.
