Instructions
- Preheat oven to 350°F (175°C).
- Prepare the crust by mixing Oreo crumbs with melted butter; press into the bottom of a springform pan.
- Bake crust for 10 minutes; reduce oven temperature to 325°F (160°C) and cool slightly.
- Beat cream cheese until smooth; mix in sugar, vanilla, and espresso.
- Add eggs one at a time, mixing gently.
- Pour filling over the cooled crust; create a water bath by placing the pan in a larger dish filled with hot water.
- Bake for 65–85 minutes until edges are set but center jiggles slightly.
- Cool in the oven with door ajar for an hour; refrigerate for at least four hours before serving.
