Ingredients
- 10.66 oz all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 8 oz unsalted butter (at room temperature)
- 14 oz granulated sugar (2 cups)
- 4 large eggs (at room temperature)
- 1 tbsp vanilla extract
- 8 oz plain Greek yogurt (1 cup, full-fat or low-fat; do not use non-fat)
- 14 packets Pop Rocks candy (.33 oz each)
- 1/4–1/3 cup coconut oil
- 9 large egg whites
- 1 lb unsalted butter (soft but still cool)
- 1/4 tsp salt
- red gel food coloring (optional)
- blue gel food coloring (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine all-purpose flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, beat together unsalted butter and granulated sugar until light and fluffy. Add in eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and Greek yogurt until fully incorporated.
- Gradually add dry ingredients to wet ingredients, mixing just until combined.
- Line your cupcake pan with liners. Fill each liner about halfway with batter.
- Add one packet of Pop Rocks to each cupcake liner on top of the batter. Cover with more batter until about two-thirds full.
- Place the cupcake pan in the preheated oven and bake for 20-22 minutes or until a toothpick inserted comes out clean.
- Allow cupcakes to cool completely on a wire rack before frosting.
- In a clean bowl, whip egg whites until foamy. Gradually add granulated sugar while continuing to whip until stiff peaks form.
- Slowly incorporate unsalted butter until smooth and creamy. Mix in vanilla extract and salt. Add food coloring if desired.
- Using a piping bag or spatula, generously frost each cooled cupcake with your prepared frosting.
- Once frosted, sprinkle additional Pop Rocks on top for extra fun before serving.
