Instructions
- In a mixing bowl, combine drained chickpeas, crumbled feta cheese, cranberries, red onion, and parsley. Toss gently to mix.
- In a small bowl or jar, whisk together olive oil and lemon juice until combined. Add Dijon mustard, honey (or maple syrup), garlic, salt, and pepper; mix until smooth.
- Pour the vinaigrette over the salad mixture and toss well to coat evenly. Chill in the refrigerator for about 15–20 minutes before serving.
