Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the sweet potato cubes in olive oil, salt, and pepper. Spread on the baking sheet and roast for 25-30 minutes until tender and caramelized.
- In a skillet over medium heat, brown the ground beef for 5-7 minutes and drain excess fat.
- Stir in taco seasoning and a splash of water; simmer for 5 minutes.
- Assemble the bowls by layering roasted sweet potatoes, seasoned beef, salsa, and avocado slices.
