Instructions
- Blend all ingredients (cottage cheese, eggs, oats, baking powder) in a blender until smooth.
- Preheat a non-stick skillet over medium heat, lightly greasing if desired.
- Pour about 1/4 cup of batter onto the skillet for each pancake; cook until bubbles form on top.
- Flip and cook until golden brown on both sides.
- Keep warm while finishing the remaining batter, then serve immediately with your favorite toppings.
