- 2 medium oranges (about 400 g), boiled and pureed
- 150 g almond meal
- 100 g shelled pistachios, finely ground
- 6 large eggs
- 200 g granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon fine sea salt
Instructions
- Preheat your oven to 170°C (340°F) and prepare a 23 cm (9 inch) springform pan.
- Boil the oranges in water for about 60 minutes, then puree until smooth.
- In a bowl, whisk eggs and sugar until pale; mix in orange puree.
- Combine almond meal, ground pistachios, baking powder, and salt in another bowl; fold into the egg mixture until just combined.
- Pour batter into the springform pan and bake for 50-60 minutes or until set.
- Cool for 10 minutes before transferring to a wire rack to cool completely.
