Instructions
- In a bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine milk, egg, vanilla extract, and melted butter until smooth.
- Mix wet ingredients into dry ingredients; fold in diced peaches gently.
- Heat vegetable oil in a heavy-bottomed pot to 350°F (175°C).
- Drop spoonfuls of batter into hot oil; fry until golden brown (2–3 minutes per side).
- While cooling slightly, prepare the glaze by mixing powdered sugar with milk and vanilla until smooth.
- Drizzle glaze over warm fritters or dip tops directly before serving.
