- 1 ½ cups fresh strawberries, hulled and diced

- 1 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda

- ¼ cup unsalted butter, melted
- 2 large eggs, at room temperature
- ¾ cup buttermilk, at room temperature
- 1 ½ teaspoons vanilla extract
- 1 cup powdered sugar, for glaze
- 1 tablespoon milk or cream, for glaze
- ½ teaspoon vanilla extract, for glaze
Instructions
- Prepare strawberries by tossing them with granulated sugar and letting them sit for 10-15 minutes. Drain well and toss with flour.
- Preheat oven to 350°F (175°C). Grease a loaf pan and line with parchment paper.
- In a bowl, whisk together remaining flour, baking powder, baking soda, and salt.
- In another bowl, mix granulated sugar, melted butter, eggs, buttermilk, and vanilla until smooth.
- Combine wet and dry ingredients gently until just mixed; fold in floured strawberries.
- Pour batter into prepared pan and bake for 55-65 minutes or until a skewer comes out clean.
- Cool in the pan for 15 minutes before transferring to a wire rack.
- Prepare the glaze by whisking together powdered sugar, milk or cream, and vanilla; drizzle over cooled bread.
