- 4 cod fillets
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 pound baby potatoes, halved
- 2 tablespoons olive oil

Instructions
- Preheat your oven to 400°F (200°C).
- Toss halved baby potatoes with olive oil, salt, pepper, and thyme in a mixing bowl. Spread them out on a baking sheet.
- Roast the potatoes for about 20 minutes until golden brown.
- Meanwhile, melt unsalted butter in a saucepan and stir in minced garlic and lemon juice.
- After roasting the potatoes for 20 minutes, push them to one side of the baking sheet and place cod fillets on the other side. Brush the cod with garlic butter.
- Bake everything together for an additional 10-12 minutes until the cod flakes easily.
- Garnish with fresh parsley before serving.
