- 1 pound rigatoni pasta

Instructions
- Cook rigatoni according to package directions; drain and reserve 1 cup of pasta water.
- In a saucepan, melt butter over medium heat, add minced garlic and cook until fragrant. Whisk in flour for 1-2 minutes.
- Gradually stir in milk until smooth; simmer while stirring. Add provolone and Parmesan until melted, seasoning with nutmeg, salt, and pepper.
- Sear seasoned steaks in olive oil and butter for about 3-4 minutes per side for medium-rare; add garlic and mozzarella during the last minute.
- Combine rigatoni with the cream sauce; plate with steak on top.
