- 8 chicken drumsticks
- 600 g potatoes, cubed
- 3 carrots, chopped
- 1 red bell pepper, chopped
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat your oven to 200C (390F).
- In a mixing bowl, combine olive oil, minced garlic, dried thyme, dried oregano, paprika, salt, and pepper. Toss in the chicken drumsticks until fully coated.
- In another bowl, mix cubed potatoes, chopped carrots, and red bell pepper with olive oil, salt, and pepper.
- Spread the vegetables on a baking tray and arrange the marinated chicken among them.
- Roast everything in the preheated oven for about 40-45 minutes, turning halfway through for even cooking. Ensure the chicken reaches an internal temperature of 75C (165F).
- Garnish with freshly chopped parsley before serving.
