- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon dried Italian herbs
- Salt and pepper to taste
- 1 pound baby potatoes, halved
- 8 ounces green beans, trimmed
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine olive oil, minced garlic, dried herbs, salt, and pepper. Add chicken breasts and coat well.
- On a baking sheet, place halved potatoes; drizzle with olive oil and season. Toss to coat. Arrange seasoned chicken breasts on top of the potatoes.
- Add green beans around the chicken and potatoes. Roast for about 40 minutes until the chicken reaches an internal temperature of 165°F (75°C), stirring halfway through.
- Remove from oven, let rest for a few minutes, then garnish with parsley before serving.
