Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, whisk together milk and eggs.
- Add panko bread crumbs, Parmesan cheese, Italian seasoning, salt, and pepper; mix until combined.
- Sauté minced garlic in olive oil until fragrant; add to mixture with parsley.
- Gently fold in ground chicken until just combined; transfer to greased loaf pan.
- Brush top with melted butter mixed with garlic powder; sprinkle with more Parmesan.
- Pour chicken broth around the meatloaf; bake for 60-70 minutes until internal temperature reaches 165°F (74°C).
- Let rest for 10-15 minutes before slicing.
