- ¼ cup olive oil
- 2 tbsp lemon juice
- 4 garlic cloves, minced
- 1 tsp Italian seasoning
- 1½ to 2 lbs boneless, skinless chicken breasts or thighs
- ¼ cup grated Parmesan cheese
Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, garlic, Italian seasoning, salt, black pepper, smoked paprika, and Parmesan cheese.
- Add chicken to the marinade and toss until well coated. Cover and marinate for at least 30 minutes.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Grill chicken for 5–7 minutes per side until the internal temperature reaches 165°F (75°C); add more Parmesan during the last minute of grilling to melt.
- Remove from grill and let rest for 5 minutes before serving with fresh parsley as garnish.
