- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 1/3 cup turbinado or granulated sugar
- 6 tablespoons unsalted butter (softened for frosting)
- 2–3 cups icing sugar (sifted)
- 3–4 tablespoons eggnog
- 1/4 teaspoon Vanilla Extract (Alcohol-Free)(optional)
Instructions
- In a large bowl, whisk together flour, spices, baking soda, and salt.
- In another bowl, beat butter and brown sugar until smooth. Add egg, yolk, vanilla extract, and molasses; mix well.
- Gradually incorporate the dry ingredients into the wet mixture until combined. Chill dough for 30 minutes.
- Preheat oven to 350°F (175°C). Roll chilled dough into balls, coat in sugar, and place on prepared cookie sheets.
- Bake for 8–10 minutes; allow cooling on wire racks.
- For frosting, beat softened butter and gradually add icing sugar and eggnog until creamy.
- Assemble cookies by spreading frosting between two cookies.
