- 2 zucchinis
- 6 1/2 ounces goat cheese
- ⅓ cup dried tomatoes (soaked in olive oil)
- ⅓ cup pitted green olives
- 4 tablespoons extra virgin olive oil
- ½ teaspoon sea salt
- ½ teaspoon ground black pepper
- 1 tablespoon Herbes de Provence
Instructions
- Wash zucchinis and slice lengthwise into 1/8 inch thick strips using a vegetable peeler or mandoline.
- Season zucchini strips with olive oil, sea salt, black pepper, and Herbes de Provence.
- Preheat grill or grill pan over medium-high heat; grill zucchini for 2–3 minutes on each side until tender.
- In a mixing bowl, combine goat cheese with chopped dried tomatoes and olives to create a filling.
- Spread the filling on grilled zucchini strips and roll them up tightly; secure with toothpicks if necessary.
- Garnish with fresh parsley before serving.
